Eggnog Dessert Bars

The holiday season brings joy, happiness, and…eggnog! As soon as I see cartons of Hiland Dairy Old Fashioned Egg Nog at my local grocery store, I make a beeline for the tasty drink. In fact, I usually start baking my favorite Eggnog Dessert Bars the same day. This is a treat that doesn’t last long around our house!

Eggnog Dessert Bars

Ingredients

  • 12 oz bag gingersnap cookies
  • 6 tbsp Hiland Dairy Butter melted
  • 1/4 cup brown sugar
  • 1/4 tsp salt
  • 8 oz Hiland Dairy Cream Cheese softened
  • 1/2 cup Hiland Dairy Old Fashioned Egg Nog
  • 1 tbsp flour
  • 1/2 cup sugar
  • 1 egg separated
  • 1 tsp rum extract
  • 1/2 tsp nutmeg

Instructions

  • In a blender, grind coolies into fine crumbs. Add the brown sugar, salt, and butter and combine well.
  • Press prepared crumbs into the bottom of a 9×13-inch pan. Bake at 350 degrees for 10 minutes.
  • Meanwhile, beat cream cheese, eggnog, flour, and sugar until smooth.
  • Add the egg white and mix well. Add the egg yolk and mix well.
  • Add the extract and nutmeg and blend to incorporate.
  • Pour the eggnog mixture over the baked crust and return to the oven.
  • Bake 25 minutes or until the center is set.
  • Allow to cool completely. Cut into squares and serve.
  • Diva’s Tip: Sprinkle a little cinnamon over the top of the bars before cutting into squares for an extra layer of yummy flavor!
