Tuna ‘N Rice Casserole

Ingredients

1 can tuna in water, drained

2 cups cooked rice

3 cloves garlic, minced
1 can mushrooms, drained
1 can cream of mushroom soup

2 cups Hiland Cottage Cheese, divided

Paprika

Salt and pepper to taste

Preparation

Preheat oven to 350 degrees. Combine all ingredients, except paprika and 1 cup cottage cheese. Spread into 9 x 13 casserole or cake pan. Top with remaining cottage cheese. Sprinkle paprika on top for color. Bake at 350 degrees for 45 minutes. Allow to set 5 minutes before serving. 

If you're watching your diet, you may use low fat cottage cheese and 98% fat free cream of mushroom soup. Substitute brown rice instead of white.
