Light Spinach Lasagna

Ingredients

1 package lasagna noodles
1 can Italian sausage spaghetti sauce
2 eggs
Hiland shredded Mozzarella cheese
1 carton (24 ounce) Hiland Low Fat Cottage Cheese
1 package frozen spinach (16 ounce)

Preparation

Mix cottage cheese with eggs. Add cooked and drained spinach to cottage cheese mix if you don't mind the way it looks.  If you prefer, you can layer the cottage cheese mix and the spinach separately. Prepare a 9x13 inch oblong baking dish with cooking spray. Start with a layer of uncooked lasagna noodles, then cottage cheese mix, spinach (if separate,) a little mozzarella and sauce. Repeat layers until everything is used, reserving enough mozzarella to cover top. Make sure all noodles are completely covered with sauce so they cook properly. Top dish with foil and cook 1 hour.  Uncover and cook additional 10 minutes. I developed this recipe when my husband decided to go on a diet. He wanted to eat "real food" so I came up with this.  It's easy because there is no noodle cooking and it is both low fat and filling. I really love it!
