Ingredients
flour tortillas
Hiland shredded Cheddar cheese
Hiland Sour Cream
2 chicken breasts
pico or rotel
1 can enchilada sauce
cumin
chili powder
Preparation
Sauté chicken in large skillet on medium heat until cooked all the way through. Season to taste with cumin and chili powder. Set aside to cool. Shred cheese. Next, shred chicken - pull into bite-sized pieces (easiest if you do this with your hands) in a 9x9 inch glass dish, cover bottom with a thin layer of enchilada sauce. Layer tortilla, enchilada sauce, chicken, Pico, shredded cheese, enchilada sauce. Repeat till you end with a tortilla topped by enchilada sauce. Bake at 425 degrees for 10 to 20 minutes or until the tortilla looks done. Sprinkle with cheese and bake until melted. Cool and serve with sour cream.
