Healthy Cottage Cheese Muffins

Ingredients

1 cup Hiland Low Fat Cottage Cheese
3/4 cup grated Parmesan cheese
1/4 cup flour
1 cup almonds

1 teaspoon baking powder

1/4 cup sun dried tomatoes (in oil), chopped fine

1/4 cup basil, chopped fine

1/4 cup water
4 eggs, beaten lightly

1/2 teaspoon salt


Preparation

Grind the almonds to a fine consistency in a food processor or blender. Mix all ingredients together and stir until well combined. Spoon into muffin cups (about 2/3 full) and bake at 400 degrees for about 30 minutes, until tops are golden. Serve hot.
