Fluffy Baked Potatoes

Ingredients

4 medium potatoes
1/2 cup Hiland Butter
1 cup Hiland Sour Cream
1 tablespoon chopped chives
salt and pepper to taste

Preparation

Scrub potatoes and prick with a fork to allow steam to escape. Bake potatoes at 375° for 1 to 1 1/4 hours. Cut a slice from the top of each; scoop out the inside and place in top of a double boiler over briskly boiling water. Add butter, sour cream, chopped chives, salt and pepper; heat thoroughly. Whip mixture until fluffy. Fill potato shells and serve immediately.
