Eggs Ala Rick

Ingredients

1 package (8 ounce) mushrooms, sliced
1 dozen eggs, beaten
1 bunch green onions, chopped
1 jar Cheese Whiz
Hiland Butter

Preparation

In a nonstick skillet, melt 2-3 pats butter, salted or unsalted. Add sliced mushrooms and sauté 3 to 4 minutes. Add green onions. Continue to sauté until mushrooms are soft. Add eggs and stir till set. Meanwhile, heat Cheese Whiz in microwave until it can be poured. After eggs are done, pour it over top. Stir 2 minutes or until everything is well combined and cheese thoroughly melted. I'm a retired Oklahoma fireman, and I made this dish a lot of mornings.  It goes great with fried potatoes and onions, biscuits and gravy, bacon or sausage, sliced tomatoes (in season). It goes over well at the fire station because if you have to go out on a call while you're still eating, you can reheat the dish on the stove and it still holds up. You just have to add a little more butter in the skillet.
