Crab Salad

Ingredients

2/3 cup Hiland Low Fat Buttermilk
1 container artificial crabmeat (6-8 pieces, each about 6 inches long)
1/2 cup low-fat mayonnaise
2 teaspoons ground ginger
1 tablespoon dill
1/2 tablespoon minced garlic
2 tablespoons lemon juice
1 cucumber (peeled and cut into small pieces)
1 slice onion finely chopped (optional)

Preparation

Cut the crabmeat into bite-sized pieces. Mix with the cucumber. In a separate bowl, combine remaining ingredients to make a salad dressing. Pour dressing over crabmeat and cucumber. Chill one hour, then serve immediately. You may like to serve this salad like a buffet dish with Ritz Crackers.
