Brie's Zuppa Toscana Soup

Ingredients

1 lb. spicy Italian sausage
1-1/2 lb. bacon, cut into small pieces
1 qt. water
2 - 14.5 oz. cans chicken broth
3-4 large russet potatoes, peeled and cubed
2 garlic cloves, crushed
1 medium onion, chopped
2 C. kale, chopped
16 oz. Hiland Heavy Whipping Cream OR 16 oz. Hiland Half & Half
Salt & pepper to taste

Preparation

Brown sausage, breaking into small pieces. Drain & set aside.

Brown bacon pieces. Drain & set aside.

Place water, broth, potatoes, garlic and onion in large pot.
Simmer over medium heat until the potatoes are just beginning to get tender.

Add sausage and bacon. Simmer 10 minutes.

Add kale and cream.

Season with salt & pepper to taste.

Heat through.

Makes 8-10 servings.

Great served with toasted garlic bread!
