Ingredients
1/4 cup whole Hiland Dairy milk
1 cup dry Italian bread crumbs
6 boneless skinless chicken breast halves
4 tablespoons Hiland Dairy butter
3/4 cup chicken broth
1-1/2 cups Hiland Dairy heavy whipping cream
3/4 cups grated fresh Parmesan cheese
1/2 cup minced fresh basil
Pepper to taste
Preparation
This recipe was given to me by my husband's Uncle Rick. I adapted some of the ingredients and quantities to fit our families tastes and size. There are never any leftovers of this recipe. This is delicious!!!! Once you try it, you will crave it again and again.
Place milk and bread crumbs in separate pie plates. Dip chicken in milk, then into bread crumbs coating lightly.
In skillet melt butter over medium heat. Add chicken to skillet cooking on both sides till juices run clear (takes about 10 minutes). Remove when cooked through and keep warm.
Add broth to skillet and bring to boil over medium-high heat; stirring to loosen browned bits. Stir in cream and bring to boil stirring for 1 minute. Reduce heat to medium-low. Add Parmesan cheese, basil and pepper, cook and stir till heated through, about 1 minute. Add chicken back to skillet and let simmer for about 2 minutes.
Serve chicken and sauce with mashed potatoes or white rice.
