Jenny’s submitted recipe:

Broccoli Cheese Cornbread

16 oz Hiland Dairy cottage cheese
½ cup Hiland Dairy 2% milk
2 sticks (+2TBSP) Hiland Dairy unsalted butter
1 cup Hiland Dairy egg substitute
1 ½ cups Hiland Dairy Colby Jack cheese, shredded
14 oz package broccoli florets
1 medium yellow onion
3 packages yellow corn muffin mix
(6 1/2 oz, Shawnee Mills)

Preparation

Preheat oven to 350 degrees. Grease 9x13 baking dish. Sautee onion in 2 TBSP butter. In a medium bowl, microwave broccoli and 2 sticks butter for 5 minutes. In a large mixing bowl, combine all ingredients (except shredded cheese). Pour into prepared dish. Bake for 35 minutes. Sprinkle with shredded cheese and bake for 5 more minutes.
