The Brainard Family
Brainard Dairy, located near Enid, Okla., has been in the Brainard family for more than 100 years. You can imagine farming has become a way of life for the Brainards – but they do a good job of maintaining a healthy work/play balance. Farming hasn’t stopped Lisa and Brad from taking trips to visit their daughter in college or an Alaskan cruise! Additionally, all three kids have been active on the farm but are encouraged to follow their passions in life.
As Hiland Dairy farmers, the Brainards are committed to raising healthy cows that produce pure, wholesome milk. This extends to careful feeding practices, where each cow is monitored and their feed adjusted to ensure they are getting the nutrition they need. The Brainards also help keep their cows happy by putting them out to graze every night.
Coming from a long line of farmers, Brad is committed to keeping independent family farms like his going; “This is a way of life to us, one I want to preserve for my family and for future generations.”
Favorite Recipe
SPAGHETTI PIE
Crust:
- 7 oz. uncooked spaghetti
- 2 tbsp Hiland Dairy butter
- 1/3 cup grated parmesan cheese
- 2 eggs beaten
Filling:
- 1 cup Hiland Dairy cottage cheese
- 1 lb. ground beef
- 1/2 cup chopped onion
- 1 tsp. each sugar & oregano
- 1 can (16 oz) diced tomatoes with liquid
- 1 can (6 oz) tomato paste
- 1/2 teaspoon garlic salt
Topping:
- 1/2 Hiland Dairy shredded mozzarella cheese
Cook spaghetti & drain. Combine hot spaghetti, butter, parmesan cheese, & eggs in large bowl. Turn into greased 10” pie pan. Using fingers, form a crust. Spoon cottage cheese evenly over crust, set aside.
Brown beef & onion until beef is browned. Drain. Stir in tomatoes, tomato paste, sugar, oregano & garlic salt. Heat through. Pour mixture over cottage cheese layer.
Bake, uncovered at 350 degrees for 20 minutes or until set. Sprinkle with mozzarella cheese and bake 5 more minutes or until cheese is melted.
Cut like a pie into 8 pieces.
